Wild Rice Chicken Salad

This is a great recipe for a different chicken salad. It has to chill for 8 hours so it is great when you need to make ahead.
Ingredients:
2 6.2oz packages long grain & wild rice mix
2 6oz jars marinaged artichoke quarters, undrained
4 cups chopped cooked chicken
1 med red bell pepper, chopped
2 ribs celery, thinly sliced
5 green onions, chopped
1 can sliced ripe olives, drained
1 cup mayonaise
1 1/2 teaspoons curry powder
Directions:
1. Cook Rice according to package directions
2. Drain Artichoke quarters, reserving 1/2 cup liquid.
3. Stir together rice, artichoke quarters, Chicken, Bell Pepper, Celery, Green onions and olives.
4. Stir together artichoke liquid, mayonaise and curry powder.
5. Toss the two mixtures, cover and chill for 8 hours.
6. Serve on bed of lettuce.
