Southern Living Ingredients:
2 (6 ounce) packages long grain and wild rice blend |
2 (6 ounce) jars marinated artichoke hearts, undrained |
4 cups chopped cooked chicken |
1 medium red bell pepper, chopped |
2 celery ribs, thinly sliced |
5 green onions, chopped |
1 (2 1/4 ounce) can sliced ripe olives, drained |
1 cup mayonnaise |
1 1/2 teaspoons curry powder |
salt |
lettuce leaf |
Directions:
1. Cook rice mix according to package directions. 2. Drain artichoke quarters, reserving 1/2 cup liquid. 3. Stir together rice, artichokes, chicken, and next 4 ingredients. 4. Stir together artichoke liquid, mayo, curry powder, and salt; toss with rice mixture. 5. Cover and chill 8 hours. 6. Serve on lettuce leaf. |
