Wild Rice Casserole Ingredients:
7 1/2 ounces wild rice |
2 pounds celery |
1 pound carrots |
1 pound onions |
16 ounces mushrooms |
10 ounces frozen chopped spinach |
12 ounces tofu |
2 cups vegetable broth |
2 cups water |
Directions:
1. Preheat oven to 350. 2. Spread wild rice evenly over the bottom of a casserole dish. Toss together celery, carrots, onions, mushrooms, spinach, and tofu and spread over rice. 3. Pour broth and water over the casserole. 4. Bake for 45 minutes, or until rice is split. |
