Wild Rice Casserole
Ingredients:
7 1/2 ounces wild rice
2 pounds celery
1 pound carrots
1 pound onions
16 ounces mushrooms
10 ounces frozen chopped spinach
12 ounces tofu
2 cups vegetable broth
2 cups water
Directions:
1. Preheat oven to 350.
2. Spread wild rice evenly over the bottom of a casserole dish. Toss together celery, carrots, onions, mushrooms, spinach, and tofu and spread over rice.
3. Pour broth and water over the casserole.
4. Bake for 45 minutes, or until rice is split.
