Growing up in MN, we had wild rice all the time. Love that taste! This is a pretty easy casserole but very good! Ingredients:
2 cups water |
1 teaspoon butter |
1 cup wild rice |
2 (10 1/2 ounce) cans cream of chicken soup |
1 lb ground beef |
1 stalk celery, chopped |
1 onion, chopped |
Directions:
1. Add 2 cups of water, and butter to a sauce pan. Bring to a boil. Add wild rice, reduce heat and cover. Simmer for 20 - 45 minutes or until water is absorbed. You may need to add more boiling water if the rice doesn't break open by the time the water is absorbed. Unfortunately, wild rice cooks differently each time. 2. Meanwhile, brown ground beef with celery and onion. 3. Drain grease. 4. Mix all ingredients together and place into a greased casserole dish. 5. Bake at 350 degrees for 45 minutes, until bubbly. 6. Serve with a salad and enjoy! |
