Light and healthy salad great for a ladies lunchon Ingredients:
1 1/2 cups wild rice |
1 cup barley |
1 orange, zest of |
1/4 cup orange juice (from the orange) |
1 carrot, peeled and grated |
1 1/2 cups dried cranberries |
1 cup honey |
1/2 cup olive oil |
3/4 cup raspberry vinegar |
4 green onion stems, chopped |
Directions:
1. Cook wild rice and barley. 2. rinse and cool. 3. mix all ingredients. 4. chill. |
