Wild Rice And Artichoke Salad |

This is a hand me down from my mother's recipe book. Don't know where she got it but it's wonderful. Ingredients:
dressing |
1 1/3 cup canola oil |
1/2 cup white wine vinegar |
1/4 cup fresh grated parmesan |
1 tbs. sugar |
1 tsp. salt |
1 tsp. celery seed |
1/2 tsp. white pepper |
1/2 tsp dry mustard |
3/4 tsp paprika |
1 clove garlic, minced |
salad |
1/2 tsp salt |
1 cup uncooked wild rice |
6 oz. frozen english peas |
6 oz. canned artichokes, halved |
1/3 green bell pepper, chopped |
3 green onions, sliced, white and green parts |
1 cup cherry tomatoes, halved |
1/4 cup almonds or walnuts, slivered or crushed |
Directions:
1. Make dressing: Combine all ingredients, shake well and refrigerate. 2. Make salad: cook rice, drain. Combine all ingredients except nuts and only add half of the dressing. Cover and refrigerate until chilled. 3. When ready to serve, toss and add remaining dressing to taste. Sprinkle with nuts and serve. |
