32 oz fat-free chicken broth |
1 1/2 cups uncooked wild rice |
1 tbsp butter |
10 oz sliced mushrooms |
1 cup chopped onion |
1/2 cup chopped parsley |
1/2 cup toasted walnuts, chopped |
1 tsp poultry seasoning |
1 salt and pepper to taste |
1 cooking spray |
Directions:
1. Bring water and broth to a boil in a saucepan. Add wild rice; cover, reduce heat, and simmer one hour or until tender. Drain. 2. Calories: 177 3. Total fat: 5.4g 4. Saturated fat: 1.2g 5. Carbohydrates: 27g 6. Dietary fiber: 3g 7. Protein: 7g 8. Preheat oven to 325 degrees. 9. Melt butter in a large nonstick skillet over medium-high heat. Add mushrooms and onion; saute until onions are translucent. 10. Remove from heat; stir in parsley and next four ingredients (parsley through pepper). Combine rice and mushroom mixture in a two-quart casserole coated with cooking spray. Cover and bake for 25 minutes |
