Incredibly healthy and delicious little salad I came up with when I was feeling a lack of veggies and healthy grains in my life. It helps to cook the rice and quinoa ahead of time so they can chill in the fridge before you add the veggies and beans. Makes a large amount! Ingredients:
1 (14 ounce) can chicken broth |
1 cup uncooked quinoa |
1 cup uncooked wild rice |
1 (14 ounce) can diced tomatoes |
1 (14 ounce) can red kidney beans |
1 (14 ounce) can artichoke hearts |
2 large stick celery, chopped |
2 green onions, chopped |
1 1/2 cups raw baby spinach, chopped |
Directions:
1. Cook rice in 1 cup chicken broth, 1 cup water. 2. Cook quinoa in water. 3. Chop unchopped veggies and throw into a bowl. 4. Pour the canned beans, tomatoes, and artichoke hearts into a colander and rinse out the extra juices. 5. Combine all ingredients in a large bowl and mix together. 6. Enjoy the deliciousness. |
