Wild Mushrooms Soup

This is a delicious fancy wild mushrooms soup.
Ingredients:
2 cups of dried boletus
2 tbsp olive oil
1 tbsp of butter
2 minced leeks
2 roughly chopped shallots
1 large clove of garlic
225g of chopped fresh wild mushrooms
5 cups of vegetables broth
1 tsp of dried thyme
2/3 cup of cream
salt and pepper to taste
fresh thyme to garnish
Directions:
1. Soak dried boletus in 1 cup of warm waterfor 30 minutes. Chop the boletus and reserve soaking water.
2. In a large pot, heat oil and butter until they start bubbling. Add leeks, shallots and garlic and saute for approx 5 mins or until they soften without changing color.
3. add wild mushrooms and saute until they soften. Gradually poor veggie broth and bring to boil. Add boletus, reserved soaking water and dried thyme.
4. Lower down heat and let simmer for 30 minutes.
5. Poor 3/4 of the soup in a mixer and porcess until homogeneous mix.
6. put back processed soup in pot, stir in the cream and warm it back making sure you dont bring it to boil.
7. garnish with whole wild mushrooms and fresh thyme.
