This is so good Ingredients:
2 stalks celery |
3 tbsp butter |
2 ibs button mushrooms |
1/2 lb shittake mushrooms |
1/2 ib oyster mushrooms |
1 tbsp tarragon, chopped |
1 tsp salt |
1 tsp white pepper |
2 cups cream |
sherry |
3 pints chicken stock |
1 pint heavy cream |
2 tbsp flour |
Directions:
1. Mince onion and celery 2. cook in a heavy pot with 1 tbsp butter 3. cook until softened 4. stir in mushrooms, when mushrooms are cooked add taragon 5. cook for 15 minutes 6. deglaze with sherry and cook until sherry is absorbed 7. stir in stock and cream 8. turn heat to high and boil 9. in small pan melt butter and stir in flour, add to smooth, beating with a wooden spoon. 10. bring to a boil till flour is mixed 11. simmer on low 20-30 minutes |
