wild mushroom soup is a a bit earthy and can be adapted or spiced in so many ways Ingredients:
1/2 cup white button mushrooms |
1/2 cup shitake mushroom |
1/2 cup cremini mushroom |
1/2 cup portabella mushroom cap |
1/8 cup onion |
2 garlic cloves |
2 tablespoons fresh basil leaves |
1 tablespoon olive oil |
12 ounces beef broth |
Directions:
1. Chop all mushrooms, onions and garlic. 2. finely chopp the fresh basil leaves. 3. Place olive oil in 2 qt pot and heat at medium. 4. saute garlic, onions and all mushrooms till onions turn translucient. 5. Add broth and remaining ingrediants and cook over low heat for 30-40 minutes. Serve with choice of croutons, cheese or bread topping. |
