Wild Mushroom Rice Pilaf

If you love mushrooms you will love this rice
Ingredients:
1 cup rice
2 cups mushroom stock (see below)
3 cups button mushrooms
1/2 cup shiitake mushroom
1 small onion, chopped
1/2 tablespoon minced garlic
2 carrots, chopped
2 bay leaves
1 teaspoon thyme
1 teaspoon rosemary
kosher salt
cracked pepper
2 tablespoons butter
Directions:
1. In a large pot add 12 cups of water and 3 cups button mushrooms, boil on medium heat reduce to 2 cups stock.
2. In butter saute onion,garlic,carrots and shiitake mushrooms,add thyme and rosemary,add rice saute 1 minute,add mushroom stock, and bay leaves.
3. cover simmer very low about 1 hour salt and pepper to your taste.
