If you love mushrooms you will love this rice Ingredients:
1 cup rice |
2 cups mushroom stock (see below) |
3 cups button mushrooms |
1/2 cup shiitake mushroom |
1 small onion, chopped |
1/2 tablespoon minced garlic |
2 carrots, chopped |
2 bay leaves |
1 teaspoon thyme |
1 teaspoon rosemary |
kosher salt |
cracked pepper |
2 tablespoons butter |
Directions:
1. In a large pot add 12 cups of water and 3 cups button mushrooms, boil on medium heat reduce to 2 cups stock. 2. In butter saute onion,garlic,carrots and shiitake mushrooms,add thyme and rosemary,add rice saute 1 minute,add mushroom stock, and bay leaves. 3. cover simmer very low about 1 hour salt and pepper to your taste. |
