WILD GRITS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Markey Estate in Texarkana, Texas in 1994. Ingredients:
1 cup white hominy grits |
5 cups boiling water |
1-1/2 teaspoons salt |
1/2 teaspoon baking soda |
1 cup parmesan cheese freshly grated |
1 teaspoon freshly ground black pepper |
1 egg beaten |
1 tablespoon milk |
1/2 cup italian breadcrumbs |
2 tablespoons butter |
1 teaspoon instant onion flakes |
Directions:
1. Add grits to boiling salted water. 2. Reduce heat and simmer 25 minutes stirring occasionally. 3. Cool for 30 minutes. 4. Add baking powder, 3/4-cup cheese, onion and pepper. 5. Mix well. 6. Combine egg and milk then add to cooked grits. 7. Pour mixture into well-greased baking dish. 8. Top with breadcrumbs and remaining cheese. 9. Dot with butter. 10. Bake in preheated 350 oven for 25 minutes. |
