These are the best scones ever. I was not a scone fan until I made these-they are so soft, fluffy and buttery and they smell heavenly when they are baking :-) Ingredients:
3 cups all purpose flour |
1/2 cup granulated sugar |
1 tbsp. baking powder |
1 tsp. baking soda |
1/2 tsp. kosher salt |
1/2 cup unsalted butter |
3/4 cup buttermilk (sometimes you have to add a little more) |
2 cups organic wild blueberries, frozen |
3 tbsp. heavy cream |
1 tbsp. unrefined sugar |
Directions:
1. Preheat the oven to 350 degrees. Lightly grease a baking sheet or line with parchment. Combine the flour, granulated sugar, baking powder, baking soda and salt in a food processor. Add the butter in bits and process until crumbly. 2. Turn the mixture into a large bowl and stir in the buttermilk until just combined. Turn the dough onto a lightly floured surface and fold in the frozen blueberries by hand. Divide the dough in half and form each half into a ball. Press the balls out to form 8 inch circles. Cut each circle into 8 wedges. 3. Brush the tops with a little heavy cream and sprinkle with unrefined sugar. Place the pieces on the baking sheet and bake for 30 minutes, until golden. Cool slightly on wire racks and serve warm. |
