WILD BLUEBERRY PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hogan Estate in Grand Prairie, Texas in 1982. Ingredients:
1 egg |
1 cup buttermilk |
1 tablespoons oil |
1 tablespoons honey |
1 cup whole wheat flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 cup wild blueberries |
Directions:
1. Mix together egg, buttermilk, oil and honey. 2. In separate bowl combine dry ingredients with blueberries. 3. Add together and mix just until it forms a batter. 4. Drop 1/3 cup batter onto 400 degree griddle and flip as soon as bubbles form. |
