WILD BLUEBERRY COOKIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Carmichael Estate in Richardson Texas in 1982. Ingredients:
2 cups all purpose flour with 1/4 cup reserved |
2 teaspoons baking powder |
1/2 teaspoon salt |
3/4 cup fresh blueberries |
1/2 cup shortening |
1 cup granulated sugar |
1-1/2 teaspoons grated lemon rind |
1 egg |
1/4 cup milk |
Directions:
1. Combine flour, baking powder and salt. 2. Coat blueberries with reserved flour. 3. Stir coated blueberries into dry mixture. 4. Cream shortening until soft then gradually beat in sugar then lemon rind and egg. 5. Add flour mixture alternately with milk beating until smooth after each addition. 6. Drop from teaspoon onto greased cookie sheet and bake at 375 for 12 minutes. |
