Low sodium, low chloresterol.
Ingredients:
1/2 cup onion, chopped
1/2 cup sweet bell pepper, red and green mixed
1 teaspoon garlic, finely chopped
2 tablespoons water
1/2 cup wild rice, uncooked
1/2 cup brown rice, uncooked
12 ounces chicken broth , low sodium
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon thyme
1/4 teaspoon dried oregano
Directions:
1. Combine onion, bell peppers, garlic, and water in a saucepan. Cook for 4 minutes, stirring constantly. Add rice; cook and stir breifly to mix. Add broth and seasonings; bring to a boi. Cover, lower heat, and simmer 45 minutes. Remove from heat and allow rice to remain covered 5 minutes before serving.
