I arrived at this by trial & error, picking my favorite parts from many existing granola recipes and adding stuff on my own. This will fill your belly & clear out your arteries.(chant with me: fiber..fiber...fiber...) Feel free to use different nuts and/or dried fruit. But the crytallized ginger really makes it special. ;) This recipe makes a LOT - good for a crowd but it also keeps for a long time in an airtight container (or 2). This is wicked tasty. (said in my best Maine accent, lol) Enjoy! Ingredients:
15 cups old fahioned oats (the big container) |
1/2 cup oat bran |
1/2 cup wheat bran |
1/2 cup wheat germ |
1/2 cup ground flax seeds |
1 cup unsalted pumpkin seeds |
1 cup unsalted sunflower seeds |
1 cup almonds (slices or slivers) |
1 cup pecans, broken up |
1/4 cup ground cinnamon |
2 tablespoons nutmeg |
1 cup canola oil |
1/2 cup honey |
1 cup maple syrup |
1/2 cup vanilla |
2 cups dried cherries |
2 cups chopped crystallized ginger |
Directions:
1. Preheat oven to 300°F. 2. Combine in a very large roasting pan the oats through nutmeg. Drizzle oil, honey, maple syrup & vanilla over all & stir well to combine. 3. Bake for 1 - 1.5 hrs, stirring every 20 minutes until it looks dry-ish & toasty. 4. When cooled, stir in fruit. |
