This is like a homemade little debbie cake, maybe like a marshmallow cream sandwich with chocolate buns. Yum! Ingredients:

2 cups all-purpose flour |
1/2 cup cocoa powder |
1 1/4 teaspoons baking soda |
1 teaspoon salt |
1 cup buttermilk (if you don't have buttermilk, use 1 cup milk + 1 tsp vinegar, stir, allow to sit for about 5 minutes, then stir again, and use as you would the buttermilk) |
1 tsp vanilla |
1 stick unsalted butter, softened |
1 cup brown sugar |
1 egg |

1 (7 oz) jar of marshmallow cream |
1 cup confectioners sugar |
1 tsp vanilla |
Directions:
1. Preheat oven to 350 degrees F. 2. Mix flour, cocoa, salt, and baking soda in a large bowl till the cocoa powder is evenly distributed. 3. In a cup or bowl, add the vanilla to the buttermilk. 4. In a separate bowl, mix brown sugar and butter till it is fluffy and light. 5. Add egg to sugar mixture. 6. Then add 1/4 of the flour mixture and mix till combined. 7. Add 1/3 of the buttermilk, mix till combined. 8. Add another 1/4 of the flour mixture, and so forth till the last of the buttermilk and the flour mix is all incorporated. 9. Using a small spoon (I used a 1/8 c measuring scoop), scoop the mix onto two baking sheets lined with parchment paper. You should end up with 24 scoops. 10. Bake for 13 minutes. Switch out baking pans once during baking so that the cakes bake evenly. 11. Allow to cool (off the pan) for at least 15 minutes. 12. Make the filling: 13. Using a mixer, all the filling ingredients until well incorporated. 14. Make the cakes: 15. Flip 12 of the cakes over so that you can spoon the filling onto the flat side of the cake. 16. Top with another cake. |
