Whoopie! Whoopie pies are fabulous and everyone will want more! Bake a lot of them. You're going to need them... Ingredients:

2 cups sugar |
3/4 cups vegetable shortening |
2 eggs, slightly beaten |
2 cups milk (regular or 2%) |
2 tsp vanilla |
10 tbsp cocoa |
4 cups flour |
2 1/2 tsp soda |
a pinch of salt |

1 1/2 cup vegetable shortening |
1 1/2 cups confectioners sugar |
12 tbsp marshmallow fluff |
2 tsp vanilla extract |
Directions:
1. Preheat oven to 350F. 2. Cookie: 3. Cream shortening with sugar in a large mixing bowl. 4. Combine beaten eggs, milk and vanilla and beat into creamed mixture. 5. Slowly stir sifted dry ingredients into the creamed mixture. 6. Beat on medium speed about 2 minutes. 7. Drop with tablespoon onto greased and floured cookie sheet (use enough dough to make a baked cookie about 2 to 2 1/2 inches). Bake for 8 to 10 minutes or until cookie just springs back when pressed in center with finger. 8. Remove and cool on rack. 9. Cool completely before filling. 10. Filling: 11. Combine marshmallow fluff, [*See home made marshmallow fluff post], vegetable shortening, and vanilla . 12. Beat until well mixed. 13. Slowly add confectioners sugar until well mixed. 14. Place a generous amount on the flat side of one cookie and top with another cookie. 15. Makes 2 dozen whoopie pies and a lot of new friends! 16. These store well in an airtight container in the refrigerator . 17. They also freeze well. |
