Wholewheat Herb Quick Bread |

We enjoy this easy loaf with a salad for lunch or a hot bowl of soup. Came from a charity cookbook (can't recall which) here in Halifax, Nova Scotia. Freezes well. Cooking time is approximate because ovens vary so please check after 25 mins. Ingredients:
1 cup whole wheat flour |
1 cup all-purpose flour |
1 cup cheddar cheese, shredded (we like mature cheddar) |
1 tablespoon honey (or sugar) |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon dried basil |
12 teaspoons dried sage |
14 teaspoons dried thyme |
1/4 cup cold butter |
1 large egg |
1/2 cup natural yoghurt |
1/2 cup milk |
1 tablespoon poppy seed |
Directions:
1. Sift together dry ingredients. 2. Add herbs and cheese. 3. Cut in butter until it resembles fine crumbs. 4. Beat together egg, yoghurt and milk. 5. Add to dry ingredients to moisten - do not overmix. 6. Batter will be moist. 7. Spoon dough into greased 9 inch round cake pan. 8. Sprinkle with poppy seeds. 9. Oven: 375. 10. P.S. you can change the herbs to suuit individual tastes. |
