I make all my breads healthy and low in fat. My family and friends are pleased with this good and good-for-you bread.Rebecca Harris, Raytown, Missouri Ingredients:
2 cups king arthur premium 100% whole wheat flour |
3/4 cup sugar |
1/4 cup quick-cooking oats |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon ground cinnamon |
1/4 teaspoon ground nutmeg |
3/4 cup buttermilk |
1/2 cup egg substitute |
1/3 cup unsweetened applesauce |
1 teaspoon vanilla extract |
1 cup mashed ripe bananas |
topping: |
1/3 cup chopped pecans |
2 tablespoons brown sugar |
2 tablespoons quick-cooking oats |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground nutmeg |
Directions:
1. In a large bowl, combine the flour, sugar, oats, baking powder, baking soda, cinnamon and nutmeg. In a small bowl, whisk the buttermilk, egg substitute, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in bananas. Transfer to two 8-in. x 4-in. loaf pans that have been coated with cooking spray. 2. Combine topping ingredients; sprinkle over top. Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool in pans for 10 minutes before removing to a wire rack to cool completely. Yield: 2 loaves (16 slices each). |
