Wholesome Creamy Apple Muffins

These dense, fruit and grain packed morsels are perfect to throw in a lunchbox for a sweet snack.
Ingredients:
1 cup whole wheat flour
1 cup flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tbsp pie spice
1/2 cup cream cheese
1/2 cup sugar
1 tbsp honey
2 oz silken tofu, pureed
1 cup sour cream
2 large apples, peeled and diced
1/3 cup raisins, soaked in hot water and drained
1/2 cup toasted buckwheat kernels (kasha)
Directions:
1. Preheat the oven to 450°F, grease 18 muffin cups and set aside.
2. Mix together the flours, baking powder, baking soda, salt, and spice, set aside.
3. In a separate bowl, cream the cream cheese, sugar and honey.
4. Add the tofu, beating well, then add the sour cream and blend thoroughly.
5. Stir in the dry ingredients, then fold in the apple chunks, raisins and kasha.
6. Bake for 10 minutes, turn the heat down to 400°F and bake for an additional 5 to 10 minutes.
7. Cool the muffins for 5 minutes in the tin, then turn them out onto a wire rack to cool completely.
