A better for you recipe. You can add 1/2 a cup of nuts to the batter. Ingredients:
1/2 cup unsweetened applesauce |
3/4 cup sugar |
1 egg |
1 egg white |
1 cup shredded zucchini |
1 cup whole wheat flour |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
1/4 teaspoon baking powder |
1 1/2 teaspoons cinnamon |
1 1/2 teaspoons vanilla |
Directions:
1. Mix applesauce and sugar. 2. Add eggs and zucchini. 3. Sift dry ingredients together and add to the sugar mixture. 4. Add vanilla. 5. Bake in 1 loaf pan (or two mini loaf pans) at 300 degrees for 50 minutes. |
