A great waffle recipe.
Ingredients:
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp salt
2 eggs
2 cups buttermilk
1/2 cup butter, melted
Directions:
1. Combine flour, soda and salt; set aside. Combine egg yolks, buttermilk, and butter, add to flour mixture, stirring briskly until blended.
2. Beat egg whites (at room temp) until stiff peaks form; carefully fold into batter. Bake in preheated oiled waffle iron. Yield: 3 8 inch waffles.
