modified carrot sweet potato recipe Ingredients:
2 cups whole wheat flour |
3/4 cup flour |
1/2 cup sugar |
1/2 cup brown sugar |
1/4 cup splenda sugar substitute |
1 1/4 cups shredded carrots |
1 1/2 cups 2% low-fat milk |
1/2 cup applesauce |
1/3 cup low fat cottage cheese |
1 cup mashed cooked sweet potato |
2 egg whites |
1 tablespoon vanilla extract |
Directions:
1. Preheat oven to 400º. 2. Combine first 5 ingredients in a large bowl. 3. Stir in carrot. 4. Combine milk and next 5 ingredients into another bowl and stir well. 5. Add to flour mixture, stirring just until moist. 6. Spoon batter into 18 muffin cups coated with cooking spray. 7. Bake at 400º for 20 minutes or until done. 8. Remove from pans immediately, and cool on a wire rack. |
