Whole Wheat Spaghetti W/ Golden Garlic and Herbs |

Adaptation from a recipe found in the May/June 2009 issue of Vegetarian Times. This is a great way to use a variety of fresh herbs and provides a complete protein. I set aside some of the plain spaghetti and chickpeas for my kids. They love them with a little butter and a sprinkle of cheese. Ingredients:
1/2 lb whole wheat spaghetti |
3 tablespoons olive oil |
4 large garlic cloves, peeled and chopped |
1 1/2 lbs of ripe tomatoes, coarsely chopped |
3/4 cup cooked chickpeas |
2 tablespoons fresh herbs, chopped |
2 tablespoons kalamata olives, chopped |
Directions:
1. Cook spaghetti. 2. Saute garlic just until lightly browned. Stir in herbs, chickpeas, tomatoes, and olives, simmer 3 - 5 minutes. 3. Drain spaghetti, reserve some of the cooking water to thin the sauce if needed. 4. Return spaghetti to the pot and add tomato/herb mixture. Season with salt and pepper. |
