I combined a recipe with my own to make pumpkin muffins, it has no added fat, refined flour and no added sugar. not too bad if you are watching those things. Ingredients:
3 cups whole wheat flour |
4 1/2 teaspoons baking powder |
1 1/4 cups splenda sugar substitute |
3 large eggs |
1/2 cup applesauce |
2 cups canned pumpkin |
2 cups cold milk |
1 1/2 teaspoons vanilla |
2 teaspoons cinnamon |
1/4 teaspoon allspice |
Directions:
1. mix dry ingredients, add the rest and mix on medium speed until well blended. 2. Pour into greased muffin cups. 3. bake at 400 degrees 17-19 minutes until slightly browned. |
