I used white whole wheat flour from King Arthur, but plain whole wheat will also do. Nutty from the whole wheat flour , spicy, moist and yummy quick bread! I was out of the cranberries so I added raisins. Chopped nuts may also be an alternative for this yummy adapted King Arthur loaf recipe. Ingredients:
2 large ripe pears peeled and diced |
1/2 cup dried cranberries or dried cherries ( or raisins or chopped nuts ) |
2 1/4 cups white whole wheat flour |
1/2 cup light brown sugar |
1 tsp baking soda |
dash salt |
1/4 cup oil |
1 tsp grated lemon peel |
1 cup plain greek yogurt |
1 egg |
1 tsp cinnamon |
1/2 tsp nutmeg |
Directions:
1. Preheat oven to 350F 2. Grease and flour a 9 x 5 loaf pan 3. Combine dry ingredients 4. Combine wet ingredients and beat to blend 5. Combine both mixtures and beat to mix 6. Batter will be thick! 7. Blend in the pears and cranberries , batter will loosen up 8. Place mixture in prepared loaf pan 9. Bake until a toothpick in center comes out clean in center 10. Cool in pan 10 minutes 11. Carefully tip loaf out of the pan 12. Cool completely |
