Whole Wheat Pasta With Veggies and Ricotta |

Delicious and healthy Ingredients:
2 ounces whole wheat penne |
1 small onion, diced |
2 garlic cloves, minced |
1 teaspoon olive oil |
1 cup frozen broccoli |
3 italian tomatoes, diced |
1/4 cup part-skim ricotta cheese |
1/4 teaspoon salt |
1 tablespoon parmesan cheese, grated |
1/2 teaspoon crushed red pepper flakes |
1/2 teaspoon italian seasoning |
Directions:
1. saute onions in olive oil over medium heat. 2. add garlic, salt, pepper flakes, and italian seasoning when onions turn translucent. 3. add tomatoes and frozen broccoli, cook until tomatoes are softened. 4. meanwhile boil pasta water and cook penne until al dente. 5. transfer pasta to sauce pan with vegetables and add ricotta. 6. gently toss to combine and finish with parmesean. |
