Whole Wheat Pasta With Spinach, Mushrooms, and Tomatoes |

They all ate it well and it was quite yummy. Ingredients:
8 ounces whole wheat pasta (i used penne) |
1 tablespoon olive oil |
1 cup sliced fresh mushrooms |
6 garlic cloves, minced |
2 tomatoes, diced |
2 teaspoons italian seasoning |
1 cup cooked diced chicken |
4 cups fresh spinach, coarsely chopped |
salt and pepper |
freshly grated parmesan cheese or crumbled feta |
Directions:
1. Cook pasta as directed, al dente. Drain when done and return to pan. 2. In a large sauce pan, heat oil to medium and saute mushrooms and garlic. 3. Add tomatoes, chicken, and italian seasoning and simmer an additional 2 minutes. 4. Add fresh spinach and cooked pasta. 5. Add salt and pepper as desired. 6. Heat through and serve immediately topping with parmesan or feta. 7. (You could also use raw diced chicken and cook that first instead of using the cooked chicken.). |
