8 oz. macaroni, whole-wheat |
1/2 cup walnuts |
1/2 cup crumbled feta cheese |
1/2 cup diced red onion |
1 1/2 cups chopped spinach leaves |
2 tablespoons walnut oil |
2 tablespoons red wine vinegar |
1 clove of garlic, minced |
1/2 teaspoon classic dijon mustard |
Directions:
1. Boil pasta until cooked; drain and rinse well with cool water. 2. While pasta cools, combine well walnut oil, red wine vinegar, garlic and mustard in a small bowl. 3. Add walnuts, onion, cheese and spinach to cooled pasta and toss with dressing. |
