Even my very picky children scarf these down (of course, I do add chocolate chips to theirs). WWPP - 3 Ingredients:
1/2 cup whole wheat flour |
1/2 cup oat flour |
1 tablespoon sugar |
1/4 teaspoon salt |
1/4 teaspoon baking soda |
1 teaspoon baking powder |
1 egg |
2 tablespoons applesauce |
1 cup buttermilk |
chocolate chips (optional) |
Directions:
1. Preheat griddle to 300. Scramble egg and mix in apple sauce. Sift and add dry ingredients. Pour buttermilk on top and mix by hand until lumps are mostly mixed. Spray a light coat of non-stick spray on griddle. Measure 1/3 cup of batter. If desired, add a few chocolate chips to each one, dabbing them into the batter to cover. Cook until light brown (about 3 1/2 minutes on one side and 2 minutes on the other). Flip carefully. Continue to cook until the middle is done (do not overcook). |
