Yummy, lightly sweet and fluffy pancakes that are good for you... And kids love them! This is a recipe adapted from one I got from Bob's Red Mill. Ingredients:
1 1/4 cups whole wheat flour |
1 tablespoon baking powder |
2 tablespoons sugar |
3/4 teaspoon sea salt |
3 egg yolks |
3 tablespoons vegetable oil (canola or safflower) |
1 1/4 cups 2% low-fat milk |
3 egg whites, beaten until fluffly |
Directions:
1. Combine first four dry ingredients in a medium bowl and whisk together to mix. 2. Mix next three (wet) ingredients in a small bowl and use a whisk to mix. 3. Add wet mixture to dry mixture and whisk together. 4. Add beaten eggwhites by folding in with spatula. 5. drop by 1/3 cup onto griddle warmed to medium, flipping once. |
