100% whole wheat recipe that I use at a school breakfast program. Kids like them as much as the white flour muffins. Ingredients:
12 cups whole wheat flour |
4 cups brown sugar |
1/3 cup baking powder |
1 tablespoon salt |
2 cups oil |
2 cups yogurt |
3/4 cup applesauce |
1 cup honey |
2 tablespoons vanilla |
12 eggs, beaten |
6 cups milk |
Directions:
1. Preheat oven 375°F. 2. Stir together dry ingredients in a large bowl. 3. Mix all other ingredients together. 4. Combine wet ingredients with dry. mixing only until dry ingredients are moist. Bake in greased muffin tins for 15 to 20 minute. 5. You can also mix in blueberries, choc. chips or your favorite fruit. I usually split the batter and do half blueberries,and choc chips.About 2 to 3 cups. |
