Ingredients:
1/2 cup(s) all purpose flour |
1 teaspoon(s) baking soda |
2 cup(s) buttermilk |
1/4 cup(s) canola oil, divided |
3 tablespoon(s) granulated sugar or splenda |
1-1/2 teaspoon(s) ground cinnamon |
2 teaspoon(s) ground flaxseed |
2 large eggs |
1 teaspoon(s) pure vanilla |
1/4 teaspoon(s) salt |
1-1/2 cup(s) whole wheat flour |
Directions:
1. In a large bowl, mix together the flours, sugar, baking soda, cinnamon, salt and flaxseed. 2. In a separate large bowl, combine the buttermilk, eggs and vanilla. 3. Gradually add the flour mixture to the buttermilk mixture and stir just until combined. 4. In a large cast iron skillet or flat grill pan, rub some of the canola oil over the entire surface and heat the pan/skillet until a drop of water sizzles when it touches the pan. 5. Spoon batter onto the pan by the tablespoon full (for silver dollar pancakes). Cook for 2-3 minutes or until the tops are covered with bubbles and the edges look dry. Turn the pancakes and cook 2-3 minutes more. Repeat with remaining oil and batter until finished. |
