I think this was from Veggie Life magazine. These are sooo good, even if you don't really like dates (I don't)...very moist, rich, & brownie-like. Yum! Ingredients:
3/4 cup brown sugar |
1/4 cup soft margarine |
1/2 cup firm or extra firm silken tofu, well blended |
1/2 tsp. vanilla |
3/4 cup whole wheat pastry flour |
1/4 cup wheat germ |
1/2 tsp. baking powder |
1/2 tsp. salt |
3/4 cup pitted, chopped dates (i have used the crystallized dates found in bulk in most grocery stores, and reduced the amount of sugar a tiny bit) |
1/2 cup chopped walnuts |
Directions:
1. Heat oven to 350 F, and grease & flour an 8 inch square pan. 2. Cream margarine & sugar together. 3. Add tofu & vanilla & beat until fluffy. 4. Mix dry ingredients separately & add to wet mixture. 5. Mix well. 6. Stir in dates & nuts. 7. Spread into pan. 8. Bake 25-30 minutes. 9. Cool at least 10 minutes before cutting. |
