Whole Wheat Couscous Salad |

Just got done making this. Yes, Marky does know how to make some healthy dishes too! I use Hodgson Mill brand, but Near east is good too! Great healthy side-Great fiber and grains for you too! Ingredients:
1 box hodgson mill whole wheat couscous (parmesean cheese and soy flavor) |
1 can garbonzo beans, rinsed and drained. |
1 small white onion |
1 large tomato, chopped and seeded. |
1 cucumber, chopped |
you can add any fresh veggies you like to this like peppers, mushrooms or whatever you like |
chopped basil |
olive oil |
juice of two lemons |
mint leaves , chopped |
Directions:
1. Prepare couscous to box directions. 2. Add Chopped vegetables to couscous. 3. Combine ingredients in large container. 4. Add salt and pepper to taste. 5. Prepare dressing using olive oil, lemon juice. 6. Mix into salad. 7. Garnsh with mint. 8. Chill for several hours. |
