Whole Wheat Couscous and Apricots

Ingredients:
2 teaspoons olive oil
3/4 cup whole wheat couscous
1 cup fat-free, less-sodium chicken broth
1/3 cup diced dried apricots
1/3 cup slivered almonds, toasted
Directions:
1. Heat oil in a medium saucepan over medium heat. Add couscous; sauté 1 minute. Stir in broth and apricots. Bring to a boil; remove from heat. Let stand 5 minutes or until liquid is absorbed. Add almonds; fluff with a fork.
