Here's a recipe for vegan cornbread using whole wheat flour and flax.... Ingredients:
1 1/4 cups whole wheat flour |
3/4 cup cornmeal |
3 tablespoons sugar |
2 teaspoons baking powder |
1 teaspoon baking soda |
1 tablespoon egg substitute |
1/2 teaspoon salt |
3 tablespoons freshly ground flax seeds |
1 tablespoon brown rice syrup or 1 tablespoon maple syrup |
1 1/8 cups soymilk |
Directions:
1. Mix dry ingredients first. 2. Heat soy milk, flax, and syrup together over low heat for ~10 minutes 3. Combine & mix. 4. Roll into a simple loaf. 5. Bake on lightly oiled pan or pizza stone at 375 for ~50 minutes, cover loosely with foil for the first 1/2 hour. |
