Whole-Wheat Cinnamon Raisin Bread |

Thick bread, good toasted. Ingredients:
2 cups whole wheat flour |
1/3 cup brown sugar, packed |
1 teaspoon baking soda |
1 teaspoon baking powder |
2 teaspoons ground cinnamon |
1 cup milk, nonfat, fluid |
1/4 cup applesauce |
1 teaspoon vanilla extract |
1/2 cup raisins |
Directions:
1. Combine the flour, brown sugar, baking soda, baking powder and cinnamon; stir to mix well. Add the milk, applesauce and vanilla extract; stir just until the dry ingredients are moistened. Fold in the raisins. 2. Coat an 8 x 4 loaf pan with non-stick cooking spray. Spread the mixture evenly in the pan. Bake at 350 degrees for about 45 minutes, or until a wooden pick inserted in the center of the loaf comes out clean. 3. Remove pan from oven and let sit for 10 minutes. Invert the loaf onto a wire rack to remove bread from pan. Turn right side up and cool before slicing. |
