From . I'm looking for a way to use up some pie cherries from the farmer's market, and I think I may have found a winner here. Let me know what you think! Note: cooking time includes chilling time. Ingredients:
3/4 cup all-purpose flour |
3/4 cup whole wheat flour |
1/2 cup oat flour |
1/3 cup granulated sugar |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/3 cup smart balance butter spread |
1/2 cup oats |
1 tablespoon orange zest |
2/3 cup fat-free buttermilk (or fat free plain yogurt) |
1 teaspoon vanilla extract |
1 1/4 cups sweet cherries |
1 egg white, beaten |
Directions:
1. Preheat oven to 375. 2. Stir together flours, sugar, baking powder and baking soda. Cut in butter. 3. Stir in oats and orange zest. Place frozen cherries in a food processor and coarsely chop; set aside. 4. Make well in center of dry ingredients. Add buttermilk (or yogurt) and vanilla. 5. Stir several times; add chopped cherries, stirring until all ingredients are combined. 6. Knead 10 to 12 times. Chill 30 minutes or longer. 7. Pat dough into 10-inch circle approximately 1/2-inch thick. Brush dough with beaten egg white. 8. Cut into 10 pie wedges. Place scone wedges approximately 1-inch apart on greased cookie sheets. 9. Bake in 15 to 20 minutes, or until light golden brown. |
