Whole Wheat Cheddar and Green Onion Beer Bread |

We call for a dark beer, which imparts a strong flavor, but any beer that you have on hand will work. Minimize foam from the beer by slowly adding it to the dry ingredients. Ingredients:
2 cups self-rising flour |
1 cup whole wheat flour |
1/4 cup firmly packed brown sugar |
1/4 teaspoon baking soda |
1 2/3 cups dark beer (such as guinness stout) |
1/2 cup (2 ounces) shredded 2% reduced-fat extrasharp cheddar cheese |
1/4 cup chopped green onions |
cooking spray |
1/4 cup regular oats |
Directions:
1. Preheat oven to 400°. 2. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, sugar, and baking soda in a large bowl; slowly stir in beer. Stir just until dry ingredients are moist. Stir in cheese and onions. 3. Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray. Sprinkle oats over batter. 4. Bake at 400° for 40 minutes or until loaf sounds hollow when tapped. Let cool in pan 10 minutes. Remove from pan; cool completely on a wire rack. |
