3 oz. each bilkes (3.5 oz. raw dough) Ingredients:
2 cups water |
4 1/2 tsp. dry yeast |
1 tbsp. sugar |
7 cups gold medal whole wheat flour |
3/4 cup sugar |
1 1/2 tsp. salt |
6 egg yolks |
1/2 cup oil |
Directions:
1. mix 2 cups water, yeast, and 2 Tbsp. sugar. set aside. 2. mix flour, 3/4 cup sugar, 1 1/2 tsp. salt together. Form a well. Pour in the oil, yolks, and the yeast mixture. Mix well with dough hook. Drizzle on a bit of oil and cover with saran wrap. 3. let rise a few hours, punch down, form into balls, let rise another few hours. 4. Bake 350 about 25 minutes. |
