Whole Wheat Challah (Bilkes)

3 oz. each bilkes (3.5 oz. raw dough)
Ingredients:
2 cups water
4 1/2 tsp. dry yeast
1 tbsp. sugar
7 cups gold medal whole wheat flour
3/4 cup sugar
1 1/2 tsp. salt
6 egg yolks
1/2 cup oil
Directions:
1. mix 2 cups water, yeast, and 2 Tbsp. sugar. set aside.
2. mix flour, 3/4 cup sugar, 1 1/2 tsp. salt together. Form a well. Pour in the oil, yolks, and the yeast mixture. Mix well with dough hook. Drizzle on a bit of oil and cover with saran wrap.
3. let rise a few hours, punch down, form into balls, let rise another few hours.
4. Bake 350 about 25 minutes.
