Whole Wheat Carrot Muffins

These muffins make great healthy snacks!
Ingredients:
1 1/4 cups whole wheat flour
3/4 cup all-purpose flour
1 1/2 teaspoons cinnamon
1/2 teaspoon allspice
1/4 teaspoon ginger powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup butter (melted) or 1/3 cup margarine (melted)
1/4 cup brown sugar
1/4 cup artificial sweetener (splenda)
2 eggs
1 teaspoon vanilla
1/2 cup applesauce
2 1/2 cups grated carrots
1/2 cup raisins (optional)
Directions:
1. Preheat oven to 375 F and prepare muffin tins with paper liners or cooking spray.
2. Combine first 7 ingredients in a large bowl.
3. Beat eggs in separate bowl, then add sugars, butter, apple sauce, and vanilla.
4. Add egg mixture to dry ingredients and mix until combined.
5. Fold in grated carrots and spoon batter into muffin tins.
6. Bake for 18-22 minutes or until toothpick inserted comes out dry.
