Whole Wheat Blueberry Pancakes |

A healthy, low fat alternative to regular blueberry pancakes. Ingredients:
160 g whole wheat flour |
20 g milled flaxseed |
5 g sweetener |
10 g baking powder |
1 g salt |
60 g egg |
185 g nonfat milk |
120 g frozen blueberries |
Directions:
1. Put the whole wheat flour, milled flaxseed, sweetener, baking power and salt into a bowl and mix them together so all of the dry ingredients are distributed equally. 2. Add the milk and the egg to the bowl and mix together with a spoon just enough until the egg is mixed in, and the mix becomes a batter. 3. Fold in the blueberries. 4. Heat a skillet over medium heat and either add just a touch of cooking oil or nonstick spray to make sure the pancakes don't stick. Add one fourth of the batter and spread it out over the pan, letting it cook for about a minute and a half or until the bottom gets golden brown, then flip it and let it finish cooking. |
