1 egg |
1/2 cup skim milk |
1/4 cup canola oil |
3/4 cup whole wheat flour |
3/4 cup white flour |
1/2 cup sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 cup blueberries |
Directions:
1. Preheat oven to 400 degrees. Beat egg; stir in oil and milk. Mix in remaining ingredients until flour is moistened. Batter should be lumpy. Fill muffin cups 2/3 full. Bake at 400 degrees for 20-25 minutes, until golden brown. Immediately remove from pan. (Greas bottoms of muffin pans if cupcake paper isn't used.) |
