A healthy version of the banana muffin. Adapted from recipe on Ingredients:
2 egg whites |
1 c. skim milk |
1/4 c. vegetable oil |
1/4 c. honey |
1 c. mashed banana |
2 c. whole wheat flour |
3 tsp. baking powder |
1/4 tsp. nutmeg |
1 tsp. cinnamon |
1/2 c. walnut pieces |
Directions:
1. Preheat oven to 400 degrees. Grease bottoms only of muffin pan or use paper liners. Beat egg, then combine with milk, oil, honey, and banana. Mix in remaining ingredients until just moistened (batter should be lumpy). Fill muffin cups full and bake 20-25 minutes. Makes 12 muffins. |
