The toasted wheat germ not only adds nutty flavor to the muffins, but also a dose of vitamin E-a vitamin that may prevent blood clots, strokes, and cancer. Ingredients:
1 cup all-purpose flour |
1 cup whole wheat flour |
1/4 cup toasted wheat germ |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 1/2 cups mashed very ripe banana (about 3 large) |
1/4 cup vegetable oil |
1 large egg, lightly beaten |
cooking spray |
Directions:
1. Preheat oven to 350°. 2. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 4 ingredients in a large bowl; make a well in center of mixture. Combine banana and next 3 ingredients; add to dry ingredients, stirring just until moist. 3. Spoon mixture into muffin cups coated with cooking spray, filling two-thirds full.
