A whole wheat version of a well loved treat. Not quite vegan, but getting close. Ingredients:
2 cups whole wheat flour |
1/2 cup brown sugar |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
3 teaspoons baking powder |
1/3 cup avocado, mashed |
1 cup banana, mashed |
1 teaspoon vanilla |
1/2 cup sour cream |
1 tablespoon ground flax seed |
3 tablespoons cold water |
1 tablespoon instant espresso powder |
1 tablespoon hot water |
1/4 cup honey or 1/4 cup maple syrup |
Directions:
1. Combine all dry and wet ingredients separately. Add dry ingredients to the wet and mix thoroughly. 2. Bake at 350 for approximately 1 hour in a greased loaf pan. |
